When they cast meteor shower, I move away or interrupt that, then they when my party hits them, you can easily kill them either one by one or in bunches. Almost everything works against them quite fine.

Shield of Absorption > the archer groups (Charr Seekers). Have a hero pre-cast this on you, run in first and they will blow their load on you and you'll see a whole bunch of 0's fly over your head. You can also precast Aegis right after that so your group is safe for 10 seconds or so.
On my warrior I run in and chain knockdown the Prophet, use finish him!, and splinter weapon on me has probably taken care of most of the rest of the group by then. Then kill the dominators, they have rezzes. I've never needed to use frozen soil for charr groups.
An alternate way is to bring a Rt/Me channeling/interrupter with the 2 AOE interrupts, Tease and Cry of Frustration. Works wonders on that nasty monk boss in Grothmar Wardowns.

Lots of options are available to take them out. The Prophets aren't really the ones to be worried about though. THey heal, but not THAT good. Worst thing they do is through a Power Drain on your casters. Even in HM they drop pretty easy, and are rarely the first target I hit. But if you want another PvE skill to help, since Sin Support and Sniper Support have been suggested, try taking Technobabble. Since the Charr like to clump up, this will also help against the Necro, Mez, and Ele Charr in the groups.

I would advise against Cynn as Charr have high armor against fire damage.
Besides BHA/empedimic, also try bringing Technobabble, using volley or barrage for AoE interupt of dazed targets and Pain Inverter (for the eles).

Technobabble is a sweet idea. As for Cynn, for bringing a henchie, she offers a nice AoE KD, which is nice, since the Charr like to stay close together. The KD, not the damage, is what I was thinking, and she always lets loose a round whenever I run into a group.

I always take out the mes and eles first, they are more of a threat than the prophets. BHA + Rapid Fire can wipe them really quickly anyway.

Good way to kill any PvE monk-heavy group is to spread damage pressure out. Lingering Curse and scourge healing are good ways to mitigate their healing as well. Spreading the damage out causes them to spread their heals out so it's harder for them to keep any one member of their team alive, including themselves.

Assassin support is good for the Moggies, also maybe 'You Move Like A Dwarf' to buttknockstop annoying skills, when you use Assassin support they have a knockdown skill (never been a Sin so not sure what skill it is, they usually do it in the 1st 2-3 seconds) if you time it right with 'You Move' you can keep em floored while you beat them to death.

Or a warmongers weapon barrage ranger.¨
Generally the most annoying monks I've met are Forgotten Sages and Dolyak Riders on HM. Man those guys can be as annoying as a boil on the ass.

Iron Palm, lead attack that KDs if the target has a hex or condition. When used with YMLAD! start with the shout, wait for one second and then activate sin support so that palm hits just after the target has gotten up, and the cripple from YMLAD! meets the requirement for another KD. If you don't wait out with sin support Iron Palm will most likely hit while the target is still KD'd from YMLAD! and the second KD will be wasted.
